My first thought would be to design the table at normal dining height as the extra 5" is too high to let guests' feet dangle, but not quite high enough for a foot rail (like on a barstool) that won't get in the way of trying to get in and out of one's seat. Perhaps the table has a foot rest? In any case, if you're set on having the table made this height or already own it, I'd suggest these chairs from Ruth Livingston. They go out of their way to come up with custom solutions and everything is made to order. The metal arms come in a bunch of finishes and the upholstery work is high quality so seat is perfect for long meals with guests. They also have am arm version. Best wishes!

I would go with anything by Costantini Pietro. a perfect example of modern design with classic lines and details that give these chairs an aura of substantiality. they are bigger chairs so the scale would be right with respect to your table. i would try to stick with standard dimensions for comfort/convenience and easy of use, but just in case, these chairs can be made higher if need be. also there are a many upholstery options that can take them in different stylistic directions.

Unless I read your measurements incorrectly, it sounds like you're looking for pub or counter-height chairs. Or are you looking for high back chairs? Here's some pub chair ideas, just in case my original perception was correct.

Your 40" table height is neither counter height 36" nor bar height 42"
To really be comfortable you need to have custom made stools to fit or retrofit the table legs to accommodate the counter stools.
The top of the table should be 12" above the top of the seat of stool for maximum comfort.
Second suggestion is swivel stools. This will allow the stools to always remain in place creating conformity and neatness. Allow
30" between stools.
