Honestly, I have no idea. But I've always seen jewish families as quite modern in daily life. And with big family gatherings, an open floorplan souns great to me! Just as long as there is plenty of (storage) space in the kitchen area ;)

There are definitely certain preferences that you should consider for resale. I would contact a religious organization or real estate agency that caters to people that religious.

Don't see there would be any differences in designing the home since some design elements such as natural light and flow are universal.

Other then having a kosher kitchen, I assume you included instant hot water dispenser.
In addition consider installing a Master timer to which a number of lights tied into it, so they can go off at pre-set time. Usually timer is connected to the fuse box to which kitchen, dining room, living room, some bedroom fixtures, etc connected too so they can go off at the certain time. Some will request to have a home wired differently, especially if its a new construction, or if you have a customer, they will request timers installed in every room so the lights can be controlled individually.
Certain lights left on 24hr a day like bathroom night lights, outside lights or hallway lights, etc. Other then that, spacious floor plan (some use theirs homes as temples or home schooling, etc, bedrooms as large as possible (most families have lots of kids), double sink in the Master bathroom and that's about the only major requests I had, other then that, everything is a normal set up.
