The general rule is to have lights over the countertops to avoid shadows. What kind of lighting did you have in mind? A floor plan and picture of the lights would help.

Recessed lights. I don't have a photo at the time. It' a new house we are moving into.

What is the slope of the ceiling? How deep are the rafters? Is the inside slope the same as the outside? Does the ceiling slope down to both sides of just the kitchen area?

Recessed lighting in a sloped ceiling rarely gives you enough light so you will have to add some under cabinet lighting and some drops to add more lighting at the right height. I would choose LED bulbs to save having to change these all the time I actually love cable lighting with different heads for different uses.
