It breaks my heart that I haven't broken the myth that wood countertops can't be used in the same places as granite yet. I am about to overload you with info but I have a life goal to teach people about wood countertops. The most popular trend we've seen in high end design in the last year is using a wood countertop for just the island and using stone on the perimeter countertops.

Our wood countertops are waterproof and will not get white rings because of the food safe, modified Tung Oil we use on them called Waterlox (think of the outside of a wooden yacht, for example).

Unfinished wood (just like unsealed granite) would not be a good choice by a sink. The key is the finish/oil you select. I wish I could go around in person and show everyone myself. But since my family wouldn't like to have me gone for that long, these links will have to do. : )

Our wood countertops are the same daily maintenance as granite, waterproof, food safe, and completely food stain resistant (when properly cleaned - ie. never use bleach or ammonia just like with granite).
