The walls are painted Benjamin Moore #1543 Plymouth rock which is a taupe color. It picks up the color of the sparkling mica. The cabinets are benjamin Moore White dove

I like richmondmel's first suggestion--glass tiles that pick up one of the soft, neutral gray tones in your granite. I like the tile in richmondmel's third suggestion as well, but it is slightly busier than I like with the contrasting white grout. It would be nice with a grout closer to the tile color. The granite should take center stage.

It looks like the only place the backsplash height might be problematic is behind the stove. I would be inclined to tell your tile setter to start setting and you'll evaluate and tell him where to stop.. I suspect you'll want it just to the height of the range hood. Have him stop at that point and make the decision then.

Oh, and my favorite is richmondmel's third suggestion. #1 is okay, don't like #2 at all.

Agreed. #2 would make my head explode.

Glass subway tiles. Comes in a large range of colors. Bring several home to play with. You want something like this do it won't distract from the granite.

I have similar granite. I definitely recommend grey glass subway tiles.

With the taupe wall color I like the 3rd tile suggestion in a gray but agree with picking a grout color that matches tile color. Consider laying the tile in a herringbone or a chevron pattern if you find the traditional subway tile pattern . (Attached pic has both matching grout & alternate pattern) I would hesitate to put the tile all the way up the wall as your ceilings look high. Could you do a stainless steel backsplash just behind the cooktop?
