getting started potato seeds

so do I put my potatoes in a closet or my garage and wait a couple of days for them to start or what do I do. I bought the red bliss potatoes from the grocery store and want to turn them into plants for me to grow.

Nothing complicated. ;) Just cut them into pieces each with several eyes. Put them someplace cool and dry for a couple of days for the cut edges to dry and heal. Then plant them.

This is what I do, could be wrong,as I am doing it from memory of my Pop and he died in 1980, and some stuff I have gleaned from here and the BBC website.
first put them in the light, so they sprout, it's called Chitting and this apparently ages the potato prematurely, and allows you to plant knowing the potato is variable, so less wasted space in rows, this can be done in egg boxes or something and I don't think it has to be direct light, just light and warmth, the eyes should be up most, this sounds easy except they are all over the potato! I am sure there is some rule of thumb about this, I just don't know it? :-)
if they are the size of an egg or smaller to leave them whole, if larger they can be cut making sure to leave at least 3 eyes in each section, I did this at the start of chitting without any ill effects last year, almost every thing have read says to do this a few days before planting, but as I said I can't work out top and I do have memories of pots cut up for weeks round the house.
it can take several weeks for the shoots to be big enough, I went for about an inch last year and this, the colour should be greenish or purple/pinkish on a combo of both, (well mine where?)
this is just me, a few days ago on this forum, and I wish I could remember who it was showed how they use generous peelings to plant, and My husband, did a PHD in something called Potato Virus X? no me neither! said he started all his by using an apple corer and just 1 eye a piece.
and only today I found a weed in the garden and found it was a potato peeling from some unfinished compost, growing really well!
on the flip side my Pop claimed that you shouldn't cut a Pot more than 3 times! and I have read that the smaller the piece the smaller the potatoes, produced.
I am fast coming to the conclusion, on that score I am going to have to run an experiment :-)
Have fun and make sure you "steal" a few little one's when they are growing, boil in water with mint, when done, discard mint and water, smother in as much butter as your heart can stand! and enjoy :-)

my mint is growing terrifically so I will have plenty. I will put the potatoes in the window and see if they develop eyes. There are no eyes on them so far. I am planting in 5 gal buckets from home depot probably one plant per bucket. The question is how much room should be left in the pot to keep adding soil as the potatoes grow. should I start the plant deep in the bucket or half way maybe?

Here's a link to the catalog of ronniger's potato farm . Page 4 and 5 detail seed potato preparation and planting. YOu don't have to do this, but they say it improves the strength and maturity of the taters.

    organicislanfarmer,

It shows that you are in zone 9.
If that is correct, you are planting potatoes too late.
You could have planted in FEB. Potatoes like cool season
    not hot summer.
Here in zone 8 my potatoes are about 10" tall and some are developing flower buds.

Chitting also called greening seed potatoes is no a requirement.
I don't think commercial farmers do that. The process is like germinating
and growing tomatoes and other veggies inside in order to get a head start.
If you plant any viable potato, it will grow sooner or later.
About cutting, again, curing the cuts is no absolutely necessay.
You can cut them right in the garden and plant them right away.
The ambrios are by the eyes. The rest is just some starchy food for them
that not all of it may be used and eventuall rotted anyway. You can experimenr this:
Peel the potato real thick, aboue 1/4" or more and plant the parts tha have eye(s).
    They will grow.

I got all that, and I have also read more online, I am planning on planting for a fall garden so i will start them sprouting in july indoors this gives me plenty of time in cooler non summer months. I live on the east coast of central florida near the space center so our "winters" are about 2 months long! lol. I am also using containers to grow them so they can be moved if necessary. Its as exciting for me as it was the first year I grew corn. The more I read yalls posts the more I want to plant!!!!!
