Asian Cucumbers with bean starch salad... yum. My husband hates cucumbers you find in the market but love the Asian cucumbers.

Fresh Basil and Watermelon salad is another one. I can't wait!

The fresh basil & watermelon sounds yummy!

Here is one that I love to make with a bunch of fresh Cilantro. Serve with your favorite tortilla chips, or serve topped on grilled chicken or fish.

1 (8 ounce) package cream cheese, softened
1 tsp. sour cream
1 (7 oz) can salsa verde
1 tsp ground black pepper
1 tsp celery salt
1/2 tsp cumin
2 tsp garlic powder
1 bunch fresh cilantro, chopped
1 T fresh lime juice

Mix & chill!

Oh - Herb butter is also great too. Mix your favorite chopped herbs with some real butter (at room temperature) - put back in fridge and use on rolls, potato dishes, etc.

I am a huge fan of a giant salad of lettuce, green onions, radishes, later in the season tomatoes and peppers, and grilling a piece of chicken or maybe a hand full of shrimp to go with. I has a few heads of lettuce from fall over winter in the cold frame and they are really producing now!

Fresh chopped salsa with tomatoes, onion, peppers sweet and hot, cilantro, and garlic all from the garden. (Sometimes I skip the chips and eat it with a spoon)

I have a love of garden onions and often make onion soup. Just slice and cook in butter and olive oil a whole mess of onions with a pinch of salt until gooey brown. Add a bit of thyme and some minced garlic until heated, then add chicken stock (hopefully home made from leftover bones??) Simmer, add salt and pepper to taste. You can add bread and melt cheese on top, or eat as is.

I LOVE onion soup... big fan of salsa from the garden as well. We also often make an Italian salad (tomatoes, onions & cucumbers - with dried Italian seasonings, S&P, olive oil & vinegar) - - and Cucumber Salad (diced cucumber, fresh dill and a bit of sour cream) as our summer sides.
