Don't cut them off, pull them off with a quick jerk. But yes, take them off as soon as they appear. Rhubarb is not grown from seed, but root divisions.

I've got a Green Victoria rhubarb plant, and it makes a lot of flowers if I let it. If I let them grow, the plant still makes more rhubarb than I would ever eat in a season, but they do get a bit unruly, and make a bazillion seeds. My curiosity about the appearance of the flowers has been satisfied, so this year I'm cutting them off.

Mine is a green variety as well, I am not sure of the variety though, but I am going to look for the paperwork that came with them. I finally found Rhubarb for sale locally, and I may plant a red type next to it. This wont cause any problems , will it?? I love this stuff, it made fantastic wine last season , and while twisting off the flowers yesterday, I broke some of the stalks...we had pound cake with whipped cream and stewed rhubarb for dessert...Mmmmmm You gotta love a fruit/veg that is so easy to grow !! :)
