Apple rootstock from seed

Hello,

I am planning (possibly dreaming) of creating a small apple orchard over the next couple of years. Now seems like a good time to start researching...

I have learnt to graft, and would really like to grow new trees myself, rather than buy them.

My question here involves how to grow a rootstock from scratch. I know it is possible to buy them, but I'd like to grow everything myself.

I know that you can create a rootstock from normal apple seeds, however how can I be more specific and grow, say, a 'dwarf' rootstock?

Do different sized rootstocks come naturally from different varieties of apple seeds, or is there more to it than that? Or are they taken from cuttings of other desired roots?

What do dwarf/semi-dwarf rootstocks grow from?

Thank you!
