You can find this type of information by using your search function on the internet, or taking out books from the library. The internet is probably easier and more up-to-date. Catalogs from mailorder nurseries often contain a good deal of useful information as well.

Your questions are too broad to be dealt with here in any meaningful way, although you can find a good deal of discrete bits of information on rootstocks and grafting in archives of Gardenweb.

i must be googleing the wrong things then as i haven't really been able to find anything about the species of rootstocks to use. I have found some things that say you will have to grow your own as we don't supply them, or use the same group as what you are trying to graft to, but aside from that..... I'll keep looking

Raintree is one place that sells small quantities of rootstocks. The catalog descriptions say what is compatible with what and how dwarfing it is. One Green World and Vintage Virginia Apples are other places that sell rootstocks in small quantities.

Two years ago I bought 40 rootstock trees from Treco in Oregon and they arrived in good shape and I have grafted most of them. (I've had the best luck with chip bud grafting). They specialize in dwarf and semi-dwarf stock. Rootstock is Budagovsky 9, which is a very hardy rootstock (zones 3-9)from Russia and can be kept to 6-10'. Best of all was the price: $1.75 each.
