Fruit bush?

I am looking for a fruit bush that will grow in Zone 5B that will produce good fresh eating fruit. I have 3 ornamental plum bushes in front of my house and I would like to replace them with a bush that produces good quality fruit. Im looking for a maximum height of 8 feet and well branching to fill in the space I have.

I have contemplated cutting the tops off of these ornamental red leaf plums and grafting fruiting scions onto it.

I also have contemplated tearing them out completely and planting chickasaw plums or beach plums instead. I am a little concerned about the quality, taste, and flavor of these plums though. I have tasted some Kansas native plums before but they had large pits and thick skins with little flesh. Are all beach or chickasaw plums this way?

Does anyone have any suggestions for a fruit bush or shrub that will be thick and a max height of about 8 feet or any fruit type that will graft onto these plum rootstocks? Any type of fruit will work. I already have several fruit trees but I am looking for a better way to utilize this space. I have blueberrys blackberrys and raspberries already so I dont really want to plant any more of these.

Thanks for your help.
