You can put them in the ground any time as long you don't disturb the soil around the roots.

I hesitate to handle newly grafted trees as the slightest bump may disturb the graft and cause it to fail. I would wait till I am sure the grafts are secure. Al

Is this grafting an easy process, or do I need lots of traing etc ??

I used to think grafting was hard, but I psyched myself into that frame of mind. Once you get a little practice and learn the terminology it's pretty easy.

A lot of time trees throw up water sprouts and suckers that need to be removed. Get a few of those and start taking them apart and putting them back together (cleft and whip and tongue grafting) or inserting buds (T budding and chip budding.)
