First Pink Sparkle Apple

Harvested our first Pink Sparkle Apple yesterday from tree transplanted 18 months ago. This is the first apple I have ever grown and harvested. Blech! It was terrible! The seeds were black/brown and crunchy, the apple was dry and styrofoamy and tasteless, there was no yellow on the peel just red and green, but it seperated from the tree with an upward tug. There was no pink tinge to the flesh as expected. Therefore I picked a small fruit younger and smaller than it and it also had mature seeds, no pink flesh, but was juicy and tart (these weren't marketed as tart type). The tree is really growing this year and has been flowering consistently and pinkly since spring, but last year it didn't really grow at all. Experienced folk please reassure me my treasured little tree (under four feet but lots of sturdy branches and 1.75" trunk at least) is just going through its ugly duckling phase?
