My red and black currants are still in full leaf, just beginning to turn slightly. But I am in a different climate to you. I doubt very much if your red currants are dead. Try bending one gently. If it snaps off dry it is dead but I suspect it will bend. I'd just leave them until next spring and see how they do. After all what have you got to lose by waiting?

It might not matter if the stem is dead. Many of the small fruits will come back from the roots if the top dies back.
