Sorry to hear about your phal spike. Unfortunately, once a spike tip has been damaged its a complete loss and I would expect that broken spike to drop its flowers within days. you can cut the rest of the spike off about an inch from the base (above closest node preferred) or just leave it to dry up and turn brown.

Stick it in a vase if it has buds. You might get flowers or even a keki.

What Jane said, I've done it a few times and usually you can get some of the blooms to open. As with any cut flowers, keep the water 'fresh'.
