I'd use them as a mulch, before burning them. (Just my personal preference. Burning stuff irritates my sinuses, gives me migraines.)

I do use them around some of my bushes and new tree plantings only to protect the roots from frost.
In the summer I take them up and use mulch. But I have
so many from these five big pines that i just burn them.
Someone in my neighborhood said I should put the burnth ashes in the flower bed, I have heard of soot from the fire place and from wood burning stoves work well, but have no ideal if burnt pine needle ashes will work well mixed with the soil in the flower beds. Anyone ever tried this.

Another option is to use the pine needles for mulch on woodland pathways. keeps the paths from being too muddy after rains and it helps define the paths and gives a more cared for appearance

I use my pine needles just as gillespiegardens mentioned & they work well this way. Also, I have put lots of my pinestraw into a mini pile. Through the heavy rainfall etc. they take their time but do decompose and this is some of the best mulching material to turn into your soil.

I had Georgia Red Clay that was as "solid as a rock" and since using this method, I have flower & vegetable beds all over :-)

What can I do about all the moss under the pine trees, we rake up needles but the soil still seems compacted and tons of different kinds of mosses

Enjoy them. Why do you want to get rid of them? If there's moss it is likely nothing else will grow there. So removing it would just leave a bare patch for weeds. And pine needles are a natural mulch so you could leave them alone. people actually pay money to bring 'pine straw' into their gardens. Yours is free. ;-)
