Has anyone experimented with different classes of roses for making rose water?

Of course, use only unsprayed roses.

The recipe I found says to take a cup of rose petals and boil them in a cupt of water with a Tblsp of honey. Steep overnight and strain.

Refrigerate for up to two weeks.

To that I'd add to remove the bitter bases of the roses. But is there something else I should know?
