scallions huge, can I freeze?

I let some of my scallions get too big. I don't really like onions, I only like young scallions so these are really too big for my liking. I do cook with them occasionally in stews and such so can I freeze these guys? I have given some away but I still have a row left that needs to be harvested. Thanks in advance.

Yes you can freeze onions. You lose the "crunch" of fresh onions, but in soups and stews that shouldn't matter.

What I did last year with my Egyptian Walking Onions was wash them and let them dry.

Then I sliced them thinly, like I would for a recipe, and put them in a clean water bottle. Tossed the water bottle into the freezer and whenever a recipe called for green onions, I shook them out of the water bottle.

Not sure the drying was truely necessary, as they onion slices seemed to get freezer burnt.

But, I LOVED having the green onions in the freezer!
