Since I grow garlic to eat and not to sell, I don't keep track of variety names on the mid-size hardnecks anymore -- just replant the ones I like a lot. In my experience, expression of purpleness varies with the season, and has little bearing in the kitchen. For all round cooking, I think I might like Appalachian Red best because the cloves are not too big or too small, just right.
