"Harden" them off. Provide a transition period before thrustingthem into the full sun.

Pot them up in a nice moisture-retentive potting mix (not "dirt"). Put them outside in the shadiest place you have for a couple of weeks. Then move them to a sunnier -- but not full sun -- place for a couple of weeks. Then move them to the sunniest location you have. That'll take care of the indoor window to outdoor full sun concern.

As for water-adapted roots becoming soil-adapted roots, sometimes that works, sometimes not. But waddaya gonna do? Just so you know, celery and carrots like LOTS of water.

And good on you for realizing that each of these plants produces flowers that attract beneficial insects!

I grew dill and parsley to attract Swallowtail butterflies, and I let the caterpillars eat the herbs, since I had more than I needed.

I got rid of pretty much all of my roses so that I could replace them with succulents and bromeliads.

I am also starting to root celery because a couple of people told me it was easy to do, and I have some good organic celery that I got at a farmers' market. I'm getting new leaves and stalks growing but don't have much in the way of roots yet.

How many roots do I need before transplanting it?

I would like to grow some turmeric - should I root that first? When I planted it in the ground, nothing happened.
