I don't taste any difference between the different types so I think as long as they are fresh seed you should do fine. There is still a little of time to plant but most folks have theirs already in the ground. Soak them in cups of water until they plump up before planting (usually overnight).

I just got an email from our Chatham Co. Ag agent saying it is still time to plant peas. My list for central piedmont suggests Feb 1 to Mar 15 if I remember correctly. I planted some two weeks ago and they are now up and growing.
