That's poke weed. It can get seven or more feet high; makes very pretty poisonous purple berries that can stain everything in site; and the leaves may be eaten if much of the oxalic acid is cooked and rinsed out of them. See: Poke Sallet, poke salad and poke salad Annie

lindarose, best to dig them out as you find them. They seem to love setting their roots anchored under tree roots.
You can cut the top off but they easily resprout from the roots.
