starting off with citrus

I live in an area where there is alot of backyard citrus trees. Since fresh fruit was always available, I never really thought about a tree of my own, things have changed. After viewing pictures of multi varietal citrus trees (and others) I have decided to start my own tree. My hope is to eventually graft muliples onto an original tree. Any suggestions on what that should be? One gentleman suggested that using inter-rootstock from sour fruit like lemons would actaually diminish the character of sweeter fruits grafted to it.(?)

Found myself at one of the box stores looking at dwarf valencia orange, blood orange, tangelo, mandarin, kumquat, lemons, limes, calmodins. Any truth to the sour fruit/rootstock suggestion the gentlemen mentioned. Any suggestions as to which interstock is most graftable?

thanks for your help
