Who's eating my artichokes

This spring I planted 17 roses in a bed by the end of our lane Since they are still small I planted 3 artichoke (thistles not Jerusalem) plants to fill in the empty space. When the snow melted I had noticed the runs of short-tailed shrews but left them be figuring they were carnivores and should be no problem. But now something is chewing off the leaves of the artichokes and leaving them lay, not eating them. Two plants are just about wiped out, and not a thing of beauty any more. Has anyone else seen such a thing with shrews?
