help!! save me

Hopefully someone will have the answer. We bought an old farm and the field,yard has horseradish EVERYWHERE!!!!! Hd has dug it up with the backhoe in some places- the roots are the size of a persons waist! I am aware that one should get all of the roots or else.... Where there isn't this there's "bouncing betty" I'm thinking of resorting to Round-up Will it work? should I open up a stand at the roadside-I could make a killing on it at a penny a pound!

I'm only doing minimal work there as we are going to build and garden there in the next year or two- will this be enough time to kill it off permanently?

We cut the grass and some of the field only to see the grass go yellow in this drought BUT the @#!*% horseradish is as green as can be and 2 ft' tall

Please save me-- I don't even eat the stuff.
