Jacaranda Tree- NorthEast FL

Hello. My LO bought us a tree to plant last year. It was a baby Jacaranda, about 5 foot tall, and had just 4 branches at the top. After planting it around October, it did really good, plants stayed nice and green. But I know nothing about how to care for plants, s we did not cover it during winter (bad I know) and all the leaves fell off.

We thought it was doomed, but a week or so ago I noticed that there are like 10-15 leaves/branches coming up from the ground. Very very base of the original "trunk". They look very healthy. They get a ton of sun, and water when it rains (Which after reading I should water it more). How do I continue to care of it to give it a chance to grow nice and tall? I know I need to cover it in the winter. What about the "trunk" that just has two dead points at the top? Do I need to trim the top off? do I need to just cut that down some? Right now it looks like a mini bush of a lot of jacaranda branches, with this 5 foot tall "stick" coming out of it.'

Thank you!
