Getting rid of this stuff

Hubby and I have worked today to get rid of a section of vine that we call "bamboo." It has thorns (huge ones) and grows way up into the trees in this area. We have dug up huge nodes (roots that look like big sweet potatoes) that these vines grow from. Hubby had sprayed them and sprayed them last year to no avail. Will digging up the roots of these tough suckers get rid of them. And are they "bamboo"? The vines can get (at least here) as big around as your big thumb with big thorns and grow up into the trees. They have green heart-shaped shiny leaves. When they got into my flower beds, they are tiny and little white "node" roots. Out in the trees, they have these gargantuan "roots." Any other way to get rid of them? Thanks!
