Lot of factors could be involved. If they were planted in a pocket of clay soil they could be suffering from lack of drainage. Then again they may be suffering from transplant shock and are dropping a few leaves and should recover.

I snuck a peak around the base of them yesterday. They are still in the burlap and there is clay soil inside & outside the burlap. I loosened the burlap & considered putting natures helper and topsoil around the base but decided to hold off. They were also bone dry... Any suggestions?

I had a similar problem with a magnolia I planted a couple of years ago. I didn't dig out the hole large enough, and the red clay trapped the water and wouldn't allow it to drain off properly. I dug out the area outside the immediate root ball and a drainage trench on the downward slope, filled in with topsoil, and it's worked beautifully.

Putting Narture's Helper and topsoil around the base now won't help. That should have been done at planting, mixed with the original soil and then used as backfill for the large hole after you put the plant in. If they are dry, that's a whole lot better than too wet, so I'd water them and perhaps use just a little slow release fertilizer with minors, like Sta-green Nursery Special or Lesco 14-14-14 with minors. For hollies, an alternative is Espoma's Holly Tone, which has been used successfully for a long time.
