Its most likely Alpinia galanga, as the other galanga (Kaempferia galanga) is rarily available in stores. A. galanga is easy to grow from plants, but most of the time the rhizomes sold in markets are dry and won't sprout. Unlike the normal edible ginger, A. galanga does not like to be stored as it doesn't have a dormancy like edible ginger (z. officinale).

Thanks. Being the gardener I am, I picked throught the pile of galanga to find the most "alive" looking one and found one that was very fresh with many new shoots. I just potted it and will update when/if it grows.
