I'd guess the question meant not the kind to be eatern, but the ornamental flowering gingers in the ginger family, and I think those with tough woody rhizomes once dried would store well in a moist spot not freezong however, but my woody Costus rhizomes kept for months stored dormant and dry in a warm house without drying out too much , but the more tender rhizomes that aren't woody, may struggle to maintain moisture or perhaps won't take dormant storage at all and on the other extreme being too mosit or wet might tend to develope rot etc.
