fall veggies: what and when?

My veggie garden's summer plants (tomatoes, cukes, beans) are nearing the end of their productive life span which is good because I'm growing sick of fresh tomatoes, yummy though they might be. I never got around to replanting my spring veggie beds (carrots, lettuce, broccoli, potatoes, peas). Still to harvest: sweet potatoes, squash, the last of the blueberries and blackberries and a half-ton of dry azuki beans.

If I totally clean out all the non-producing plants (leaving the tomatoes) I'll have two 8x20 beds to plant. I've never tried to do fall veggie gardening before. What experiences have y'all had? What's your favorite fall veggie? When's the best time to plant them in Athens?
