I eat tons of them fresh and freeze them for pies.

I would gather and freeze if you have the space. You can decide later what to do with them. Wine sounds good.
I haven't worked with Mulberries, but I would think you could follow a blackberry recipe.

We have several large trees but our type doesn't have much flavor at all. I usually just throw a handful in vinegar to make a pretty red/purple color.

Do any mulberries have much flavor? We have wild ones nearby that don't even have much taste other than sweet. I have planted some white ones and some black/purple ones hoping for some variety some day.
