Preserving iced tea?

My daughter and I have found a superb mint tea recipe using fresh mint from our garden. We think it would be a wonderful drink at Christmas time. Could we make it, and can it in gallon jars, or is there a more practical way to preserve it?

REFRESHING MINT TEA:

Place 2qts fresh mint leaves and a cup of sugar in a large bowl, pour a kettle full of boiling water over the leaves and let it sit for several hours, or overnight. Strain. chill. serve over ice.

Just freeze the mint, then do your recipe at Christmas. Can't see any reason to can the whole thing.

The other is to make simple syrup infused with the mint, then can the syrup. I do 1/2 pint jars in a BWB for 10 minutes. When you're ready to use it, thin it with the tea of your choice. I generally use either a plain black tea or chamomile as the base.
