Help me create a recipe

I've developed quite a Banana Jam recipe collection and "fan club." So far, I have regular ole' Banana Jam, Banana Nut Bread Jam, Banana Strawberry Jam, and Chocolate Banana Split Conserve.

I'd like to create an "Island Banana Jam" that has bananas, crushed pineapple, dried coconut, and maybe a little rum for "exotic flare." I've looked all over the place to find a similar recipe I could modify, but no luck.

So, anyone want to help me try and create recipe for Banana Island Jam? I'm open to any other fruit being added...

O.k., here I go...

3 cups ripe bananas, mashed (about 6 medium)

1 1/2 cups crushed pineapple, drained

1/2 cup dried coconut

1 T lemon juice

1 box powdered pectin

1 tsp. EVER-FRESH or Fruit Fresh Fruit Protector (optional)

6 cups sugar

2 T dark or light rum

Mix bananas, pineapple, coconut, lemon juice, Ever-Fresh, and pectin in a saucepan and bring to a boil. Add sugar and bring back to rolling boil, boil hard 1 minute. Remove from heat, add rum, and skim off foam.

Ladle into prepared half-pint jars, and process in a BWB for 10 minutes.

I've not made this, so I'm not sure if there is too much or too little sugar. I'm also thinking macadamia nuts would be a nice addition.

Any ideas?

Sorry, my only contribution is to say "YUM!!!!" and are you going to let us in on the other recipes??

Lets see, omit the pectin, the Ever Fresh, 5 1/2 cups sugar and add lots more rum. Oops! I'm making a cocktail! I hope some of the experts chime in. This sounds really yummy!

My one bit of true advice, I'd be leery of adding the macadamia nuts because of the oils. I wouldn't want it to make the whole jam go bad.

Some orange might fit well with those flavors.

Marie, yes and it is devine....especially spooned over vanilla ice cream. I have people asking for me to make jars of this for them.

    Banana Nut Bread Jam

10 ripe bananas, pureed (need 3 cups)
    1 tablespoon lemon juice
    4 cups granulated sugar
    1/2 cup brown sugar
1 1/2 cups toasted walnuts, minced
    1 box pectin
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg, optional

Mix bananas, walnuts, lemon juice and powdered pectin in large kettle. Stir while bringing to a full rolling boil. All at once add sugars. Stirring continuously, heat until full rolling boil. Continue to heat 1 minute. Fill jars to 1/4 inch of top seat with two-part lid and ring. Boiling water bath for 10 minutes.
    Makes about 3 pints.

Jim, I thought about adding something more "citrusy," maybe only have 1 cup of pineapple and a 1/2 cup of orange pulp (maybe) instead of 1 1/2 cups crushed pineapple.

I also thought marischino (sp?) cherries might fit in. Hmmmm....

    Sounds good to me.

There are a couple of recipes in Blue Ribbon Preserves similar to want you want. You could compare your ingredients. I'd be inclined to pick two recipes you like, use half the ingredients of each to make one combined batch. Based on these recipes, personally I would increase the amount of lemon juice you are using. Ph of bananas is 5-5.29, fresh coconut 5.52-6.18, and pineapple 3.2-4.1. I wouldn't completely count on the pineapple to help out the others.

    Banana-Pineapple Jam
2 3/4 cups peeled and diced ripe bananas (about 7 medium)
    1/3 cup bottled lemon juice
1 teaspoon antioxidant crystals or ascorbic acid crystals
1 cup drained canned crushed pineapple
    5 cups sugar
    1/2 teaspoon unsalted butter
    1 3-oz pkg liquid pectin

    Banana Rum Jam
3 3/4 cups peeled and diced ripe bananas (about 10 medium)
    6 tablespoons bottle lemon juice
1 teaspoon antioxidant crystals or ascorbic acid crystals
    5 cups sugar
    1/2 teaspoon unsalted butter
    1 3-oz pkg liquid pectin
    1 1/2 to 2 teaspoons rum extract

    Coconut Pineapple Conserve
(I made this for my FIL, it passed the test)
2 20 oz cans crushed pineapple in its own juice, lightly drained
    1/4 cups bottled lemon juice
    5 cups sugar
2 3 oz pkgs liquid pectin
1 1/4 cups shredded or flaked coconut
    1 cup chopped macadamia nuts

    From Jamlady
    Pina Colada Jam
    7 cups sugar
2 20 oz cans crushed pineapple in its own juice
    3/4 cups coconut flavored rum
    1/2 cup lemon juice
2 3 oz pkgs liquid pectin
    2 teaspoons grated lemon rind
    1 teaspoon butter

    Jamlady's Banana Jam
3 1/2 pounds bananas (weight without skins)
    3 cups sugar
    1 1/2 cups lemon juice
    1 teaspoon butter
    1/4 teaspoon cinnamon

Stacie, I made your banana nut bread jam yesterday and everyone loves it!!! It is very sweet so I can't let my kids have too much at one time but it's awesome :) I gave one to a neighbor already and i tried it on bread with peanut butter. So good! Can't wait to try it on vanilla ice cream. Thanks for the recipe!!

Melly, I just got the Blue Ribbon Preserves Book for Christmas. Have you made any of the those jams? They sound wonderful. Any other recommendations from that book?

I have made a few. I'll try to remember them. I find she uses the liquid pectin a lot and since I can't get it here without having it mailed, I avoid those recipes. (That being said, I brought back 4 boxes in my luggage so I can fill the demand for habanero gold jelly.) Here is the list the best I can remember:
Cranberry ketchup - yummy on a turkey or ham sandwich
    Coconut Pineapple Conserve (for FIL)

Seems like there was something else. Oh well. I also consult it when I cam comparing recipes. I hope you like it.
