Hi! like lots of folks, I've got an abundance of cucumbers. As a family we eat lots of cuke salad in the summer. I have used my cukes in the past to make pickles and relishes. These are good, but the majority of my family are not pickle (sour food) eaters. So I was hoping to find a cuke recipe I can freeze that would be more appealing in those cold winter months. We love soup, and I've found cucumber soup recipes online, but not sure how many people actually like those.I would want a hot soup over the more common cold cucumber soup. I wonder if any of you have actually made and eaten and loved some hot cucumber recipe that I could make and freeze? I'm imagining something thick and creamy like potato soup, but am open to anything. Thanks!
