Why.....

I am new to canning this year - it's my first vegetable garden and I actually have enough stuff to bother with. I've read the manuals, books from the library, etc, but have a few 'how & why' questions regarding jar prep.

What exactly is considered adequate jar prep. Do I have to wash them out immediately before filling them? Do I have to keep them submerged in hot water right up until I fill them? How about the lids? What will happen if I don't?

I have a large pressure canner for low-acid foods, but am confused when it comes to the tomatoes. How much acid do I have to add to the tomatos and/or salsa to be acidic enough to can in boiling water? Will there be a difference in my product if I pressure can the tomato products rather than boil them?

Thanks so much in advance for any advice you can give me.

Debra
