I canned tomatoes last night and today I notice a weird white residue in the bottom of some of the jars. It sort of looks like soap scum. I used a bottled lemon juice that was labeled as Key West lemon juice but other than that - pretty straight forward. Tomaotes (quartered), salt (canning variety) and water hot packed in pints in a BWB for 50 minutes (higher altitude here). Anyone know what caused the scum? Will it dissolve? It is unsightly enough that I'll probably cull the jars that have it (about 3 out of 14). Any thoughts would be appreciated.
