What to do with the juice drained from chopped tomatoes?

I grow mostly heirloom slicing tomatoes, so when I make Annie's Salsa (yum!) I skin, seed, chop, and drain the tomatoes in order to reduce the amount of liquid that I'm starting with (and reduce cooking time). Last year, the strained juice went bad in the fridge while I tried to figure out what to do with it. I want to avoid that this year!

I'm thinking I could use it in soups this winter, so could I just can it as for tomato juice made with whole tomatoes? Could I use it in a version of Shirley's vegetable juice cocktail? Hm, I'm thinking that might not work, safety-wise. Anyone have any great ideas for using this flavorful juice?
