Taste the stuff and see if it tastes like sauerkraut. The timeline given by Michigan State University also gives temperatures:

"Store at 70 to 75 degrees Fahrenheit while fermenting. At temperatures between 70 and 75 degrees Fahrenheit, kraut will be fully fermented in about 3 to 4 weeks; at 60 to 65 degrees Fahrenheit, fermentation may take 5 to 6 weeks. At temperatures lower than 60 degrees Fahrenheit kraut may not ferment. Above 75 degrees Fahrenheit, kraut may become soft."

So, your call. Is it fermented enough?

I have had kraut finish in 3 1/2-4 weeks but as Annie said it all depends on your temps and method.

There is no "cast in stone" time on kraut and I have read about results in anything from 2 to 8 weeks. Plus some prefer the less (or more) fermented taste so if it tastes done to you - it's done. ;)

The taste test is the one that I usually go by. My pantry keeps a temperature at around 70 to 75 degrees at the times I'm fermenting sauerkraut. So the short times mentioned are about right for me.

Occasionally, I have added some distilled white vinegar to my taste. Perhaps that gives it a bit more safety factor when canned. At least, I've never had a bad result so far.

Some of my early batches were processed by bringing the kraut to a boil before jarring - then doing a BWB. I found, however, that I preferred packing the kraut in the jar, then pouring over the hot brine - then doing BWB. It resulted in more firm texture.

I'd can it - if it tastes OK.

I just canned 3 quarts that fermented for about 4 weeks.
I've got another 3 gallons going now (almost 2 weeks).

I agree on the taste test. If you like it now, can it.
Mine sits on the dining room table and temps vary from 68-75 or so, depending on the weather, traffic in and out of the doors, etc.
