Dixie Relish

Has anyone made this before? Did you like it? hate it? I grew cabbage successfully this year and am looking for ways to use it. I am not a fan of sauerkraut and neither is the DH. There's just the two of us, so a head of cabbage is a lot for us.

Dixie Relish

1 quart chopped cabbage

2 C. chopped onions

2 C. chopped sweet red pepper

2 C. chopped green pepper

1/2 C. kosher salt

3/4 C. sugar

3 T. mustard seed

2 T. celery seed

1 qt. white vinegar

Dissolve salt in 2 qts. of water. Pour over chopped vegetables and let stand for 1 hour. Drain. If too salty, rinse and drain again.

Add the vegetables, sugar and spices to a large pan with the vinegar. Simmer for 20 minutes. Bring to a boil.

Ladle into hot, sterilized jars. Adjust lids. Process in a hot water bath for 15 minutes.

that is one heck of a lot of vinegar for the amount of veggies. there are tested recipes for what I call ChowChow and what the USDA calls Piccalilli which are somewhat similar and you might like better. More sugar, more veggies including green tomatoes and/or chopped cukes, cider vinegar and the "sweet spices" cinnamon, ginger, allspice.

Guess I should have asked what you didn't like about it before I offered a critique, but this is one from the USDA which Linda Lou posted recently

    Piccalilli (my kind of ChowChow)
    6 cups chopped green tomatoes
1-1/2 cups chopped sweet red peppers
    1-1/2 cups chopped green peppers
    2-1/4 cups chopped onions
    7-1/2 cups chopped cabbage
1/2 cup canning or pickling salt
3 tbsp whole mixed pickling spice
    4-1/2 cups vinegar (5 percent)
    3 cups brown sugar
    Yield: 9 half-pints
Please read Using Pressure Canners and Using Boiling Water Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning.

Procedure: Wash, chop, and combine vegetables with 1/2 cup salt. Cover with hot water and let stand 12 hours. Drain and press in a clean white cloth to remove all possible liquid. Tie spices loosely in a spice bag and add to combined vinegar and brown sugar and heat to a boil in a sauce pan. Add vegetables and boil gently 30 minutes or until the volume of the mixture is reduced by one-half. Re-move spice bag. Fill hot sterile jars with hot mixture, leaving 1/2-inch headspace. For more information see "Sterilizing Empty Jars".

Adjust lids and process pints and half pints 5 min.
NOTE: if you want to skip boiling and sterilizing the jars, use clean jars and process 10 min.

Didn't I read a thread where you posted LindaLou's zucchini relish ... I wonder if you could use shredded cabbage in lieu of the zukes .. different texture, try some different herbs/spices.

BTW what is the texture of the zucchini in that relish after processing. Did you shred or grind?

Never made the Dixie but have done the very similar Freezer Slaw that is in BBB with really good results if slaw appeals to you? We also cut the heads into quarters, blanch and freeze in zip lock bags. Steamed with melted butter in the winter...great! Hard to use up a good crop of cabbage when there is just two of us! ;)

I made the one that is in either the ball book or in the Mrs wages book last fall. I really like it an every one I gave it to liked it also. Plus, it has a nice look to it with the red pepper.
