subbing tomatillas for tomatoes

I know that tomatillas can generally be subbed for tomatoes in salsas due to their increased acidiity. What about in other tomato recipes?

I'm thinking, specifically, of the spaghetti sauce without meat recipe from NCHFP. I'd like to make a tomatilla sauce with onions and peppers. Not a chunky salsa, but a smooth sauce like this recipe makes. I would eliminate the brown sugar, which I have confirmed with NCHFP is a safe elimination for tomatoes. The mushroom are already optional, and I would eliminate those. I would not use any fresh herbs, but probably some dried cumin only (in lieu of the called for parsley and oregano).
