how long do eggplants last?

How long do you think an eggplant will last (and be good) refrigerated?

I have company for dinner next Sunday night and want to serve eggplant parmesan. I picked all the eggplants on Saturday (fearing a freeze) so my options are to keep a couple in the frig till Sunday or to slice, bake, and freeze and thaw on Sunday.

What to do, what to do....
