That pulpy red part. Do it before seeds form. I believe that's too late. But if they have, let those go and keep the seeds for next year. You can search online for images and such that will help.

I grew a nice long row of these this year, and boy are they productive. I found directions for harvest online, Most of the directions say to harvest when they are fully grown but still tender, where they easily snap off. I was able to snap off a lot of them, but often found it easier to use kitchen shears because I wanted to avoid snapping off the adjacent new bud. Or one would have a more rubbery stem, bend, and then strip a long piece down the stem - not so good for the plant. Don't wait too long for harvesting, because removing the ones that are ready causes the plant to keep producing more. They also become quite hard and difficult to process (remove seed pods) if you wait too long.

I've dried a lot for tea, they taste great, and I'm sure I'll keep growing them, but these things are very productive, and it is time consuming to prep for drying. It takes time cutting each calyx in half and cutting out the seed pod. I'll keep looking for an easier way. I took a few branches in my patch that I marked with ribbons and didn't pick any of the calyx from those branches so they would mature for seeds. I was kinda expecting that the pods would start to dry and split, but the pods stayed bright red, got much larger, and definitely harder. I've had some cold nights, and frost will be here any day, so I've started pulling up whold plants, shaking off all the dirt, and hanging them in the garage - I want those seed pods to mature for planting next spring.
