Apple Pie Jam question

I have made Linda's Apple pie jam twice now and LOVE IT!!! But I do have a question. The apples float to the top of the jam, and I end up with a jar with no apples. (which I do not mind as I will heat it up and use on ice cream) Am I doing something wrong with the recipe? I fill the measuring cup with the apples and then fill wit water to the 4 cup mark. Am I doing this correct?

Yes, that is right. Sometimes my apples float, but I have found if I dice them smaller they do a lot better.
Apples are lighter than the syrupy jam part so they float.

Thank you very much, I know my family loves it!

I'd be interested in the variety of apples y'all use for Apple Pie Jam. I use a mix of Mutsu, Late MacIntosh, and something sweet like Cortland or Golden Delicious, and if I am lucky enough to have them - Wolf River (it is very early relative to the others and does not keep well so timing is everything).

I'm one of those people who usually use what ever is on sale :-)

Usually it's Red Delicious...yuck! I can't stand to actually eat them but with the spices in the jam, I can't really tell any difference in which apples I use....hence....the sale apples go in.

I like Fuji apples for most everything. They are just my favorite apple. It depends upon the price, too for me.
I would not use red delicious, though, personally. If you don't mind them that is fine.
Granny Smith will give a nice tartness. So do Braeburn.

I'm with you Linda. We don't like them in this house...we LOVE them. We buy them for eating fresh. Unfortunately, they just about never go on sale here. Closest thing is 99 cents a pound a couple of times a year, and usually no where near canning season. Supply and demand I guess.

Last year I went to the store and found 3 pound bags of Red Delicious for 49 cents a BAG! Imagine...16 cents a pound for apples. We bought something like 10 bags and I canned them up into everything LOL.

    Canning season is year round

LOL - true for most people maybe but not for me. In winter it's cookie baking before Christmas then quilting after. Also I do a lot of my heavy cleaning in the winter. I leave a lot of stuff go during the year so I have to play catch up in the winter.

Spring is for getting the yard and garden ready. After the garden is planted I start any big yard projects while the garden is growing. This year I put in a brick sidewalk that had a turn and two steps in it. Next year the part of the sidewalk I want to do is straight, thank goodness! We're also going to be putting up a second garage.

Late summer into the fall is put aside for canning. If I can't get it done in that time, I'm pretty much outta luck :-)

Doesn't anyone else have all this stuff to do?! Or does everyone just can all year round whenever you get a whim?

We have been using mostly Gold Rush apples this year, but used enterprise for apple sauce. I have never tasted a better apple than the gold rush though, and they "keep" in the fridge for ever!

I shouldn't be posting, I've been online for 2 hrs while wash is going. But I hear you on the cookies! Last year started baking as soon as we got back from vacation (Tgiving Day, OK, I started the day after), and didn't stop til Xmas Eve (when I woke up at 6am and starting making stollen for the family)!

This year I think I'm giving jams, jellies and salsa I already have canned. Though I lucked out on almond filling, have lots of flour (and still 10 lbs of sugar) so maybe I'll still do the stollen...

    Pink applesauce - add cranberries!

Off to start pumpkin pies and cranberry sauce since I have 3 hrs before DD gets home...

Oops, sorry, wrong thread (about the applesauce).
