I have grown Borlotto Lingua di Fuoco, Borlotto Stregonta and Borlotto Solista and the last two are regulars in my garden. I have never tried any of them as snaps because they make such fine large shellies.

As the shellies develop, the hulls turn red. As the seeds become mature with maroon streaks, the pods start to get rubbery. At any point you can open a pod to see if the shellies have developed color.

If you grew more than you can use fresh, you can always boil them for 5 minutes and freeze them. - Dick
