I don't think it's boring at all. By going with the lighter hickory you will get the warmth of the wood which is really nice. I think y ou could find a quartz countertop you'd like. Check out Cambria Snowdon White, which has a warm fleck in it but would work with cooler tones as well. I think all pics you chose are great inspiration whether you go with a warm or cool palette.

The counter top that I chose was marble and although very beautiful is very soft and damages very easy. I would not recommend marble since it is so soft

You're bathroom looks great so far! Definately not boring. It's rather spa-like. Silestone's "Lagoon" or Quantra's "Athens" are two other options. Try checking with your local granite/marble suppliers & slab galleries. Even if you're not interested in granite, most of them also carry quartz. They may even have remnant pieces of a color that you're interested in, so you could get it for a discounted price.

If you like the almost all white vanity tops you should get what you like! Plus, the white vanity will be a timeless look and you can always add other textured surfaces and elements of interest. For example, for the spa vibe as in your second photo, you could add some light blue shimmering mosaic tile.
