The hot peppers are more forgiving than the sweet peppers when it comes to summer weather.

If the weather hits its summer averages for the Valley, your scotch bonnets should be turning red after Labor Day. If you still have many green ones, pull the plant out of the ground and hang it upside-down in a warm place, they will continue to ripen. This won't make them much hotter, just much redder (or oranger).

Sweet peppers insist on very mild nights and lots of water.

I wouldn't expect to see noticable weekly growth and blossoms until later in June, and a lot depends on how the transplants were handled and the soil they are in.

You can increase the heat by wrapping plastic sheeting around a wire or stick frame (top open) and placing either dark bottles or clear bottles filled with dark liquid (food coloring or a black tea bag) inside the plastic next to the plant to absorb what heat there is during the day and radiate it back at night. I find that planting them when it is still cool retards their growth/production and generally do not set mine out until it is much warmer. You might also put black plastic on the ground to help increase the warmth of the soil.
