You might want to ask this question on the pepper forum as they may have some suggestions if you tell them you are from VT.

The peppers may ripen on the plants if you give them supplemental light and can keep the humidity high enough; most sun-loving plants have a tough time with indoor heat and low humidity and light levels, though peppers are perennials. Is your schedule and pot size such that you can move them in at night and put them outside once the morning has warmed up? Right now I have my peppers and basil under a spun bond row cover and plastic pipe hoops, but I will have to harvest them all if we have more than a light frost. I find that most larger chile peppers need too long a growing season to produce well in my area, and I have tried a half dozen varieties over the years. I have been successful with only one variety; I get great crops of Hungarian Wax (AKA Hungarian Hot Wax) peppers which are only-slightly-warm chiles that do well despite cool nights and a relatively short growing season.

Some veggies will ripen after being picked, and if you are planning to dry them, you may be able to pick them and lay them out to ripen. Or you can use them green; they will still have a significant amount of heat.

They will ripen, however IME, the peppers are shockingly mild. As in sweet pepper mild.

Now if you want to do this for real, it is possible to overwinter those plants. It isn't easy. They tend to have major aphid problems, and a few other things. But if you succeed, they will start blooming in May, and produce ripe peppers in August.

I grow fatalii peppers in MA, and, because it takes them so long to produce fruit, I often bring them inside before the first frost to finish ripening. Last year I probably got 15 peppers off of two plants by November or December. I didn't notice a decrease in hotness. The plants survived the winter (they don't always -- agreed about the aphids!), and were very productive outside again starting in June and July.

Not sure they'll make it through another winter indoors, but I'm hoping...
