WANTED: new to pepper

Seems some of yall really know your peppers.

I've always been interested in peppers, but until now I've grown mostly cactus. More than likely, they'll be container-grown inside until March. Is accidental X pollination much of an outdoor occurance? I don't necessarily want any Yellow Portugal Wax Habaneros. Also, do they require winter dormancy?

have the following seed coming in early next week:

  1. habanero
  2. jalapeno
  3. yellow hungarian wax
  4. hot portugal
  5. serrano
  6. new mexico chili
  7. anaheim chili

any tips for germinating welcome. If yall have any good pepper stories too, that'd be alright.
