They should start blooming soon by sometime in August. I have nice pictures of ours, in bloom, in the middle of September.

I don't harvest until after the first hard freeze. But I notice that the flavor improves much better after some real hard cold.

Either leave them in the ground and dig them as you need them, or else, dig a bunch and store them in the hydrator of the fridge, in a plastic bag with some damp paper towels. They last a long time that way.

it is Sept in Wisconsin , my sunchokes are about 10 feet tall and they have not bloomed. Are they going to bloom?

I think I just discovered my new privacy fencing. :D Mind are very tall, too. I'll dig them up and move them this fall!
